Carrot Cake Walnut Slice

Ingredients

Base

  • 1 cup Goldies Carrot & Walnut Keto Low Carb Porridge
  • ½ cup peanut butter
  • ¼ cup coconut oil, melted
  • ¼ cup keto chocolate chips
  • 2 tbsp powdered keto sweetener

Topping

  • 100g sugar-free dark chocolate
  • 1 tbsp coconut oil, melted
  • Handful of chopped Goldies Walnuts

Directions

Base

  1. Mix porridge, peanut butter, melted coconut oil, chocolate chips and sweetener until thick and evenly combined.
  2. Press firmly into a lined small square tin. Freeze 15–20 minutes until firm.

Chocolate Topping

  1. Gently melt chocolate and coconut oil together until smooth and glossy. Pour over the firm base and tilt the tin to spread evenly. Sprinkle walnuts over the top while the chocolate is still wet. Press very lightly so they stick.

Set and Slice

  1. Refrigerate 20–30 minutes until fully set. Slice cold with a warm knife. Store in the fridge.
